This week’s version featured tender chicken and locally sourced smoked Cajun cranberry sausage from Swan Market, lending a rich, smoky depth to the dish. Slow-simmered with the “holy trinity” of Cajun cooking—onions, bell peppers, and celery—our gumbo was thickened with a traditional dark roux, giving it its signature flavor and velvety texture. Served over rice, this dish was a true taste of Louisiana’s culinary heritage.

Originally a Monday tradition in Louisiana, when families would use leftover ham bones to season a simmering pot of beans, this dish has become a comfort food favorite.
